Plug the dough mat into a 120 volt power source, place a thin towel on your countertop, place the dough mat on top of the towel and set your thermostat to a desired temperature. Place your dough in a covered container on the dough mat and let the proofing process begin.
The dough mat is designed to work with yeast based dough that requires proofing or rising such as bread dough, pizza dough, pastry dough, sweet roll dough, sourdough, and frozen dough to name a few.
Yes, the dough mat will provide a warm and consistent environment during the fermentation process allowing for more reliable results with your sourdough start.
This will vary depending on your environment and the preference on how you proof your dough. We recommend starting at 110 degrees and adjust as needed. For frozen doughs you may want to increase the temperature for a faster rise time. You can use the thermostat to increase/ decrease the temperature to a heat that works for your dough type.
On the temperature control you will see three buttons – A power button, a (+) button and a (-) button. Press the power button to turn on and then use the + or – button to adjust the temperature. The “set temp” will be the temperature you set your dough mat to and the “real temp” will show you the actual temperature of the dough mat.
The temperature range is from 60-120 degrees Fahrenheit.
The dough mat is safe to put on all countertops. We do recommend putting a thin towel under the dough mat. This helps maintain a controlled temperature level for your dough to have an optimal environment to rise.
Yes, covering the dough during the rising process is important to retain moisture and maintain an optimal heat level without drying the dough out. You can cover with a thin towel or plastic wrap. The dough can stick to plastic wrap if it rises to the top of the container, use cooking spray or oil on the underside of the plastic wrap to help avoid this. Always refer to your recipe for specific instructions.
Our dough mats are designed to work with all types of containers for your dough. If using plastic make sure it is heat resistant and designed for food use. Please do not use any defective container that has sharp edges that can cut/pierce the dough mat.
You may clean the dough mat by using a damp cloth to wipe down the mat after each use. Do not put in dishwasher, place under running water or submerge underwater.
Please store your dough mat laying flat. Although the mat is flexible you want to avoid folding or creasing the mat.
